Chicken Macaroni and Cheese
What happens when you only have a small amount of left over chicken and it won't feed the entire family? Make chicken macaroni and cheese that's what. Chicken Macaroni and Cheese is a creative use of left-overs when cooking on a budget. I also had about one third of a bag of shredded Monterey Jack cheese to use so I simply added that to the bechamel when making my cheese sauce.
